|Monday's Pineapple & Avocado Salsa|

This is great with fish, tacos, quesadillas, and I'm sure a host of other things I haven't imagined. Always gets compliments from friends.
1/3 fresh pineapple, cut in 1/4 inch cubes
1 avocado, cut in 1/4 inch cubes
1 red onion, chopped
1 vidalia onion, chopped
handful of fresh cilantro, finely chopped
juice of 1 lime
salt & pepper
2-3 Tablespoons of jalapeno relish (if you can't find it, then 1/2-1 jalapeno pepper finely chopped, and 1/2 orange colored pepper chopped)
Combine and refrigerate 'til ready to use. Best consumed the day it's made.
