|MONDAY'S TURKEY & BEAN CHILI|

1/4 C canola oil
2 onions, chopped
1 lb. ground turkey
16 oz. marinara sauce (I like Citarella's) or canned tomatoes, chopped
2 (canned) chipotle peppers, chopped (I like Goya) *more if you like it REALLY spicy!
10 oz. 16 bean mix (I like America's choice), soaked overnight or minimum 8 hours, then drained -- you can replace with any bean like kidney for example
1 bottle Lager beer, or another rich tasting beer (12 fl. oz) plus more while cooking
3 Tablespoons of chili pepper
1 bay leaf
salt and pepper to taste
In a large pot, heat oil over medium-high heat.
Saute onion & turkey until turkey is cooked through, 5-10 min.
Add marinara sauce or chopped tomatoes and mix.
Add chipotles peppers.
Add beans, beer, chili pepper, bay leaf, and salt and pepper, and mix well.
When mixture reaches boil, lower heat to simmer-low, and put cover on the pot allowing a little steam to escape.
Cook for 1-1/2 to 2 hours, or until beans are tender.
Add more beer and/or water if mixture begins to dry up (check after an hour or so).
You can serve with chopped fresh cilantro on top, as well as a dollop of Crema Mexicana (Mexican sour cream) or sour cream.
Monday's notes: I know it seems crazy to use marinara sauce, but when I realized I didn't have canned tomatoes, or fresh tomatoes for that matter, in my pantry, I decided to use the next best thing, marinara sauce (hey, it's tomatoes and spices, right?) and it worked SO well!
